Annual Febuary Leave - Yan can cook Part Deux - Boss Sorry if you don't have enough people to work tomorrow

Woohoo!!! First day in annual 3 day leave. And as usual I always cook for my guinea pig I mean colleagues. 3 dishes this time round, Butter Rice, Lemon Chicken and Bake Potato and Shiitake Mushroom, not Burnt Potatoes kay.

My estimation on the amount of ingredients need is still flawed as usual. The potatoes and Mushroom this time round are smaller, should have gotten more or at least reduce the quantity of whipping cream used. But still it come out okay, just a little "creamier". Omit the onions due to one of my colleague's dietary restrictions. And also thyme since NTUC don't stock it up....heck NTUC never stock up on herbs like thyme, parsley and basil. I could go down to Cold Storage or check out Sheng Siong but I'm just plain lazy.

Shiitake Mushrooms, The first time I made this I end up if lots of leftover mushrooms, this time round I didn't get enough o.o"

I wish the Internet is advanced enough so that I can upload smell. It smell so mouth watering when I took it out hot from the oven



Next up is the Lemon Chicken.

Chicken Fillet

Tender rabbit chicken Meat. Season with a mix of black and white pepper. No salt though since the stock for the sauce is already salty.

End product look good enough to eat on its own if you don't mind the bland taste. no salt remember XD



Lemon Sauce

And I thought the sauce would be hard. Just dump in all the ingredient. I reduce the quantity of the sugar though and I glad I did, cause it was commented that the sause is pretty sweet on it's on but just nice with the chicken breast.



And last but not least and gratefully easiest to make is the Butter Rice. Omit out the chicken stock again due to dietary restriction. And this time round the rice turn out nice and moist.
